Vegan Early Riser Citrus Bowl

Are you sweet or sour in the morning?


Well, I am a little bit of both. Over the past year, I have had to become a work-in-progress kind of morning person. I have never been one to jump right out of bed at the crack of dawn, but I now have a delicious motivation for wanting to be the first one up, so it is no longer as painstaking as it used to be. You guessed it, I do it for the breakfast.


One of the things still to this day that is challenging for most people is finding time in the morning to prepare, eat and enjoy a good breakfast. I am a citrus lover but also have a nagging sweet tooth, so for the sake of satisfying my two biggest morning cravings, I came up with a breakfast that is not just unique in flavor and nutrient-dense, but also one that is simplistic for those with a busy life and schedule, because even the busy deserve breakfast, and a good one I might add.


It checks all the boxes, vegan, gluten-free, etc., and is a do-it-yourself friendly so if you are having a craving, what I have learned from experience is that following them sometimes leads to some of the most delicious concoctions, so experiment away.


Early Riser Citrus Bowl


Ingredients

  • ⅓ Cup of Coconut Yogurt

  • 1 Navel Orange

  • 1 Pomelo

  • 1-2 Clementines

  • ¼ Cup Shredded Coconut

  • 1 Tbsp of Agave, or sweetener of choice

  • 1 Tbsp of Hemp Seeds

  • 1 Tbsp of Goji Berries

  • 1 Tbsp of Nut or Seed Butter

  • 2 Tsp of Cinnamon

  • ¼ Tsp of Nutmeg

Instructions

  • Slice up your Orange and Pomelo into thin slices, and peel your clementine, ripping apart gently to form slices.

  • In a bowl, pour in your coconut yogurt.

  • Layer on top your citrus fruits, then add in the rest of your ingredients one at a time building your bowl to your liking.

  • Add any additional fruits, nuts, or seeds, and enjoy this on the go or in the comfort of your own kitchen!
