You give life to what you give energy to...

Over the last year, feeding to fuel has become one of my biggest mottos. Not just because through it I have learned that life is way too short for constantly worrying about what you consume on a given day, but also because of how it taught me the importance of listening to my body instead of what everybody else had to say. Here is a secret no one told me along the way to trying to make healthy changes synonymous with my life, habits, etc…

What works for everybody else, or someone else, does not necessarily mean it will work or is the best thing for you.

After throwing out the diets, hours in the gym, and “healthy” food lists and starting to create a better version of myself from scratch, this was one of the greatest lessons I learned. I have been fully vegan for a year now, and only after educating myself every step of the way. Doing so allowed me to find a lifestyle that helps me to be both mentally and physically healthy. For me, that means happily eating whole foods from the earth, a food, an energy source that boy have I ever enjoyed. So why this recipe?

Because a year ago, I would have never eaten this wonderful snack. Why? Because diet culture told me peanut butter was too dense in calories to consume, sugar was something I couldn’t eat let alone touch, and snacking was not something I allowed myself to do.

This was when I believed I was the most “fit” and “healthy” when in reality it was the most unhappy I had ever been.

In this new year, focus on connecting with what your body needs and using the resources to do so. That may mean listening to doctors and nutritionists. Finding a network of people that will support you, and help you find the right direction. It may mean learning what things work for your body and what things don't because it's that part of taking care of you that was the most life-changing for me.

I used many different resources over the last couple of years, and so many of them have such great knowledge that I found it incredibly helpful. They all have different focuses but together they all helped me build a better foundation of self-care, both physically, mentally, emotionally, and nutritionally and I am all the better for it.

Plantyful Energy Bites

  • 1 1/2 Cup Peanut Butter or Sunbutter

  • 1/2 Cups Oat Rolled Oats

  • 1/2 Cup of Seeds (Hemp/Sunflower is my favorite combo)

  • 1/4 Cup Oat Flour

  • 1/4 Cup Maple Syrup or Agave

  • 1 tsp Vanilla Extract


  • Blend or pulse in a food processor until thick, scoop out onto a clean surface to form your bites.

  • Roll each bite into either shredded coconut, cocoa powder or maca powder then place in your fridge for 1-2 hours. A delicious treat, enjoy!

Makes 10-12 bites.


* Add more oat flour for a dense more well-rounded ball, this recipe makes good firm bites but they firm up after an hour two in the fridge.

** Dip in melted chocolate, place in the fridge for 2-3 hours and enjoy as a dessert or treat!
